Pancakes and Puddings

It is rich and warm
Coating my leg
Pooling at the apple of my calf
Dripping down
Slowly sliding to my heel
This thick syrup of pain

Yeah yeah yeah.
I've been up since 4 with cramps and spasms.

Do you have a surplus of apples? Tart firm baking apples?
Here's a recipe that will take care of one or two and that last egg that looks so lonely in your fridge.

Apple Pudding

Preheat oven to 350 degrees

In a small bowl mix:
1/2 C all purpose flour(I use whole wheat for this)
1 tsp baking powder(NOT baking soda)
1/2 tsp ground cinammon
1/2 tsp kosher salt(just 1/4 tsp if you use table salt!)

In a large bowl mix:
1 large egg
3/4 C sugar

Add dry mixture to wet and stir til blended.

Fold in:
1 1/2 C chopped apple(leave the peel on, okay?)(It's good for you and looks pretty)
1 C chopped nuts-I prefer walnuts though whatever you like will be fine I'm sure.

Spread batter in a well greased 9 in deep dish pie pan.

Bake for 45 minutes.
Serve warm or cool, with ice cream or fresh whipped cream if you're feeling fancy.
No pictures today...I've made this innumerable times and we always eat it it too fast for me to remember the camera.

Sounds delicious. So I guess the nerves are waking up - is this a good thing or a bad thing, I wonder. Well, all I can sya is keep getting all the medical attention you desire - and then some.

Mom the apple pudding IS SO DELICIOUS and so simple. The pain in my leg is welcome because I can feel it though disconcerting numbness is very much present. However I do not like waking up at 4am. At all. For any reason. Especially pain.

So the cramps and the spasms are because of the bulging disc? I've been told I have spasms in my back and a bulging disc. I've had cramps in legs for a good while now, I thought I was lacking vitamns.

The fact you never remember to take a pic, and it's gone before you do speaks volumes for how good it must be!!!!!!

This reminds me of German Pancakes my mom used to make (maybe it's the same thing).. it's been a while.

Sorry about your (from what I glean) sciatic pain. It's awful(had two disks fused in my late teens). Just hang in there! And, if you can, get yourself in a C shape (hugging your knees)..

DianaH-well, the cramps and spasms in my leg and back are associated with the inflamed sciatic nerve slowly coming "back to life" and misfiring messages to my leg muscles and hamstring. If you have been diagnosed with bulging discs I would certainly recommend follow up treatment of your choice before it gets worse. I do hear that potassium deficiency can cause cramping. I am no doctor but from one hurting person to another-YOU are worth taking the steps to wellness!

Nej-that stuff is sooooo good. Really really good. And relatively healthy. Ask Mot to make some for your next card party!

Victoria-I'll try and remember to take a photo next time so you can see. I don't think they're the same but who knows? Believe me I wrap up in a C as much as I can-it does help alot. I can't imagine having this as a teen-though perhaps a younger body recovers and adapts more quickly(noooo that is not me feeling oooold, just comparing the difference in how my body recovered from pregnancy and childbirth 12 yrs apart). Still waiting to hear more about Brian...

We took Brian to the vet last night and got the call this morning that he's 100% healthy (thank goodness)!

He has since been free to integrate with the other two cats. So far so good.

I'll post pix once I get one where he's not moving!
